1 Agonis Ridge Organic Lamb loin roast
2 tablespoons Agonis Ridge Organic Extra Virgin Olive Oil
½ brown onion finely chopped
4 sprigs fresh thyme
2 teaspoons lemon zest
½ cup fresh breadcrumbs
½ cup currants
sea salt & fresh cracked black pepper
Remove string and unroll loin roast. Season well with the salt and pepper
Pre heat oven to 180deg
In a small frying pan heat the olive oil. Add the chopped onions and thyme soften for a few minutes then add all the other ingredients and heat through.
Spread filling evenly over the unrolled roast then roll up tightly and secure with kitchen string, place in a baking dish and cook for around 1 hour, rest the roast for 15 minutes, cut into slices, serve with mash and veg or couscous.
Vary the filling using a combination of any dried fruits, chopped nuts or seeds, olives and any fresh herbs.
